Roti is also a savory, flexible flatbread, sometimes filled with seasoned ingredients such as potatoes or yellow peas. It’s a well-loved dish where I’m from, which made me appreciate this recipe even more

Ingredients

Making Chinese scallion pancakes involves three main parts: the dough, the seasoning mixture, and the topping.
Here are the ingredients you’ll need:

Part 1: The Dough

  • 2½ cups all-purpose flour
  • 1 cup warm water
  • 1 teaspoon sunflower oil
  • ¾ teaspoon salt

Part 2: The Seasoning Oil

  • 1 teaspoon salt
  • 2 – 3 tablespoons sunflower oil
  • 1½ tablespoons all-purpose flour
  • 2–3 scallions (only the white part, finely chopped)

Part 3: Topping

  • 5–6 scallions (only the green part, cut into small rings)

How to Make Chinese Scallion Pancakes (Step-by-Step)

Now that you have all your ingredients ready, it’s time to start making the scallion pancakes step by step.

Step 1: Prepare the Dough

Start by making the dough. Add the flour to a bowl, then slowly pour in the warm water and oil while mixing. Mix everything until a dough forms, then knead for about 5 minutes, until smooth. Shape the dough into a ball, lightly coat it with oil, cover it, and let it rest.

Step 2: Make the Seasoning Paste

While the dough is resting, prepare the seasoning paste. Add the oil and the white parts of the scallions to a pan and heat over low heat. This helps infuse the oil with flavor. In a separate heat-safe bowl, mix the flour and salt. Once the scallions turn slightly brown, turn off the heat and remove them from the oil.
